I'm Nedra Baldori and I've been cooking professionally for over 30 years. I've worked as a personal celebrity chef, a restaurant chef, a catering chef, a band tour roadie chef, and a film and commercial food styling chef. However, nothing satisfies my soul like preparing a meal outside of the confines of my kitchen. And that's what this is all about.

After graduating as valedictorian of my culinary class, I started my own catering company at age 25. From this, I fell into the world of rock and roll tour catering in 1990.

My first world tour was U2’s Zoo TV stadium tour in 1992. These tours lasted a year or more, and traveled throughout the United States, Europe, and South America. Other European tours followed including Bon Jovi, Eros Ramazotti, Nine Inch Nails, and Phil Collins.  I also worked as head chef for domestic catering companies on Beastie Boys, Billy Joel and Elton John, Bruce Springsteen, Faith Hill and Tim McGraw, Neil Diamond, and Phish. These tours fueled my passion for travel and led me to new culinary discoveries worldwide including Japan, New Zealand, and Australia.

My love of camping started on my first U2 tour. There was a week-long break and instead of staying at the hotel in Munich with the rest of the crew, I decided to head to the Alps to camp. I knew I needed to take a break from crew members and get a dose of Alpine air to recharge my batteries. This would prove to be a pivotal decision as I discovered off-the-beaten-track food finds and began creating inventive healthy meals at my campsite. If I wasn’t working, traveling, and cooking, then I was traveling, camping, and cooking. This appetite for discovery took me on camping adventures throughout Europe, New Zealand, Hawaii, South America, and the United States.

I have done location catering on films including Air Force One, Courage Under Fire, Light it Up, Love Jones, Soul Food, A Thousand Acres, and Twister.  I've also worked behind the scenes in various capacities for large events including Austin City Limits Music Festival, Grand Primio de Mexico Fox Sports TV, Harley-Davidson’s 100 Year Anniversary Open Road Tour, Lollapalooza, the televised Vote for Change Concert in 2004, and Woodstock ’99. 

The last 16 years, I've been operating my own catering company where I work as a personal chef for musical artists. Most recently, I have worked for Adam Levine and Behati Prinsloo, BOSTON, Josh Groban, Maroon 5, Melissa Etheridge, and Yanni.  

When not on tour, I freelance as a food stylist. My work can be seen in the films Manglehorn and Men, Women, and Children as well as commercials for Enbridge, Fiesta Supermarkets, HEB, KitchenAid, Lowe's, and Chuy's Restaurants.

Born and raised in Michigan, I now reside in Austin, Texas, “The Live Music Capital of the World.”  Texas is the ultimate playground for my culinary and outdoor passions – the weather is suitable for year round exploration, and there's a never-ending array of diverse food finds. Live music is just the icing on the cake.
